shoestring fries PREP: About 10 mins. COOK: About 40 mins MAKES 4 SERVINGS MAKE AHEAD Slice potatoes and coat with oil mixture up to a couple of hours before baking. French fries, usually deep-fried and high in fat, have to be one of the most delicious and addictive foods. These lower-fat fries-which really are "bakes"-are also addictive. (Take a look at them on the front cover.) Ingredients
  • 2 large baking potatoes (about I-I/2 Ib), unpeeled and scrubbed I tbsp olive oil
  • 2 tbsp grated Parmesan cheese
  • ⅛ tsp each salt and freshly ground black pepper ⅛ tsp garlic powder ⅛ tsp chili powder
Instructions
  1. Preheat oven to 425°F. Spray 2 small rimmed baking sheets with cooking spray.
  2. Cut potatoes lengthwise in half. Slice each half into 8 wedges. Stack and thinly slice wedges intI shoestring shapes about ¼-inch wide. Place in bowl. Add remaining ingredients and toss well Spread out on baking sheets.
  3. Bake in centre of oven for 40 to 45 minutes, turning fries occasionally, or until browned and crisp.
