Chicken Tortilla Soup

Chicken Tortilla Soup

A good way to use leftover chicken or turkey and corn on the cob
  • 2T oil
  • 1 onion chopped
  • 1 sweet red pepper, diced
  • 1 jalapeno pepper, seeded and minced
  • 2 cloves garlic, minced
  • 1 t cumin
  • 1 t dried oregano
  • 1 tsp chili powder
  • 3 plum tomatoes peeled and chopped
  • 6 c chicken broth
  • 2 c diced or shredded cooked chicken
  • 1 c fresh corn kernels
  • 2 T lime juice
  • pinch white sugar
  • pepper
  • Garnish
  • 2T chopped fresh coriander
  1. In large pot, heat oil, add onion and cook about 3 min. Add red and jalapeno peppers, cook about 5 min stirrring often. Add garlic and spices, cookfor 2 min stirring often.
  2. Stir in tomatoes and broth, and simmer covered for about 20 min.
  3. Add chicken and corn, simmer until corn is tender,about 2 min
  4. Just before serving, stir in lime juice, sugar, pepper to taste
  5. In bowls garnish with coriander and corn chips
