Sweet Potato Fries w Curry Mayo

Ingredients
- 4 sweet potatoes - 2½ lb
- 2 egg whites
- 1 T oil
- 1 t paprika and cumin
- ½ t pepper
- Curry Mayo ½ c mayo, 1 t lime juice, ¼ t curry paste
Instructions
- peel potatoes and cut into french fry shapes - ½ "
- In large bowl whisk egg whites til frothy
- Whisk in oil, cumin, paprika, pepper
- Add potatoes and toss to coat
- Spread on parchment sheets and bake at 425 for 30-35 min, rotate and switch pans half way through
