Ever ready Bran Muffins - Revised
 
a healthier variation
Ingredients
  • 3 eggs
  • ¼ c molasses
  • 1 c apple sauce
  • ½ c oil
  • ½ c maple syrup
  • 4 c buttermilk
  • 4 c all bran
  • 4 c whole wheat flour
  • 4 t baking soda
  • 1 t salt
  • 2 c raisins
Instructions
  1. Beat eggs in large bowl, add rest of liquid ingredients and stir
  2. Add all bran and let soak a few minutes
  3. Thoroughly mix the rest of the ingredients
  4. Add dry ingredients to the liquid and stir til just combined
  5. Store in glass container for up to 2 weeks
  6. Seal top of batter with plastic wrap to stop it from darkening
  7. Bake at 400 for 20 min
