Ever ready Bran Muffins - Revised
- 3 eggs
- ¼ c molasses
- 1 c apple sauce
- ½ c oil
- ½ c maple syrup
- 4 c buttermilk
- 4 c all bran
- 4 c whole wheat flour
- 4 t baking soda
- 1 t salt
- 2 c raisins
- Beat eggs in large bowl, add rest of liquid ingredients and stir
- Add all bran and let soak a few minutes
- Thoroughly mix the rest of the ingredients
- Add dry ingredients to the liquid and stir til just combined
- Store in glass container for up to 2 weeks
- Seal top of batter with plastic wrap to stop it from darkening
- Bake at 400 for 20 min
