Shoestring Fries

French fries, usually deep-fried and high in fat, have to be one of the most delicious and addictive foods. These lower-fat fries-which really are "bakes"-are also addictive. (Take a look at them on the front cover.) Ingredients
- 2 large baking potatoes (about I-I/2 Ib), unpeeled and scrubbed I tbsp olive oil
- 2 tbsp grated Parmesan cheese
- ⅛ tsp each salt and freshly ground black pepper ⅛ tsp garlic powder ⅛ tsp chili powder
Instructions
- Preheat oven to 425°F. Spray 2 small rimmed baking sheets with cooking spray.
- Cut potatoes lengthwise in half. Slice each half into 8 wedges. Stack and thinly slice wedges intI shoestring shapes about ¼-inch wide. Place in bowl. Add remaining ingredients and toss well Spread out on baking sheets.
- Bake in centre of oven for 40 to 45 minutes, turning fries occasionally, or until browned and crisp.
