Lorraine's Lunar Rhubarb Cake
Ingredients
- Batter: ½ cup butter 1 ½ cup white sugar
- 1 egg 1 tsp vanilla
- 2 cups flour 1 tsp baking soda
- 1 cup buttermilk (or milk) 2 cups chopped rhubarb
Instructions
- Mix batter and gently add rhubarb (tossed with 1 tbsp flour.)
- Spoon into greased 9”x13” pan.
- Topping ¼ cup butter 2 tsp cinnamon
- cup brown sugar
- Blend and sprinkle topping over batter.
- Bake at 350 for approx 45 min
