Mushroom and Cheddar Quesadillas
Ingredients
- 2 T oil
- 227 g mushrooms, chopped
- 2 cloves garlic, minced
- pepper
- ⅓ c coriander, chopped
- 2 T jalapeno pepper. minced
- 1 c shredded aged cheddar
- 6" corn tortillas
- Heat ½ oil, add mushrooms, garlic, and cook about 5 min.
- Let cool and stir in jalapeno, coriander and cheese
- Arrange 3 tortillas on baking sheet and spread mixture on top
- Cover with 2nd tortilla, press gently
- heat remaining oil and cook til golden brown and crisp
- Cut each into 8 wedges
- Serve with guacamole and/or sour cream
