Mushroom and Cheddar Quesadillas
 
Ingredients
  • 2 T oil
  • 227 g mushrooms, chopped
  • 2 cloves garlic, minced
  • pepper
  • ⅓ c coriander, chopped
  • 2 T jalapeno pepper. minced
  • 1 c shredded aged cheddar
  • 6" corn tortillas
  • Heat ½ oil, add mushrooms, garlic, and cook about 5 min.
  • Let cool and stir in jalapeno, coriander and cheese
  • Arrange 3 tortillas on baking sheet and spread mixture on top
  • Cover with 2nd tortilla, press gently
  • heat remaining oil and cook til golden brown and crisp
  • Cut each into 8 wedges
  • Serve with guacamole and/or sour cream
