Emily's Christmas Cookies
Ingredients
- 4 eggs
- ½ cup maple syrup
- 2 cup chopped dates
- Finely grated zest of 1 or 2 oranges
- 2 cup flaked coconut
- 1 cup dried cranberries, coarsely chopped
- 2 cup chopped pecans or walnuts
- 2 teaspoon vanilla extract
- ½ teaspoon almond extract
- 1 t cinnamon
Instructions
- Beat eggs and stir in syrup, dates and zest
- In heavy greased frypan cook, stirring constantly for 10 to 12 min on medium heat til dates are soft
- Remove from heat and mix in remaining ingredients
- When cool roll into 2 t balls and roll in granulated sugar
- Refrigerate for up to 4 weeks
