Apple Cranberry Muffins
Serves: 12
Ingredients
- 1 cup grated apple
- ½ c unsweetened apple sauce
- ¼ c melted coconut oil (to melt coconut oil, add maple syrup and microwave for 30 sec.)
- ¼ c maple syrup
- 2 eggs
- ½ c rolled oats
- 2T chia seeds
- Whisk together above ingredients and let sit for a few minutes.
- 1cup of a combination of oat flour, 2T hemp seeds, 4T quinoa, or sorghum, or mixture ?
- 1½ tsp baking powder
- ½ t baking soda
- 1½ t ground cinnamon (Ceylon is the healthier cinnamon)
- 1 t ground ginger
- sprinkle of nutmeg
- Whisk together the above dry ingredients in a separate bowl
Instructions
- Pour the wet into the dry and stir.
- Fold in: ½ to ¾ c fresh or frozen chopped cranberries
- /2 to ¾ cup chopped walnuts or pecans
- /2 to ¾ c raisins or currants
- Spoon into muffins cups about ¾ full and bake about 25 + min at 325 F
- Yield 12 muffins
- Variations Replace grated apple with zucchini or carrot
- Replace cranberries with blueberries, raspberries etc
- Eggs can be replaced with: 1T chia + 1T water = 1 egg Mix and let sit for a few min
- notes: 1. Coconut oil smoke point is 350 so just to be on safe side reduced oven temp to 325
- Also controversy over whether safe to cook ground flax seed so left it out but should get 1-2 T of ground flax /day so add to oatmeal, soup, salad etc.
- Keep skin on grated apple (I use food processor - easier than grating and also use it to turn oatmeal into oat flour.
