tuna melt

12 plus english mufins
1/3 cup minced onion
1/3 c green relish
1/4 tsp pepper
1 cup mayo – may need more
3 cans chunk tuna, drained 
1 pkg motzerella grated
8-9 hard cooked egs, peeled and cut in chunks

  1. toast 12 plus english muffins cut in half
  2. Mix onion, relish, pepper, mayo, 1/2 of the cheese, more mayo if needed
  3.  lightly stir in tuna
  4. Lightly stir in egg (nt want it to get all mushed up)
  5. spread on muffins and put rest of cheese on top
  6. Bake 350 on convection til hot and cheese is melted
    7.  optional – Broil for a minute or 2 to brown the top a little

Freezes well
