Classic French Vinaigrette Makes:
1 cup (250 mL)
Ingredients
- ¼ cup (50 mL) white wine vinegar
- 1 garlic clove, minced
- 1 tbsp (15 mL) Dijon mustard
- 1 tsp (5 mL) dried tarragon or ½ tsp (2 mL) dried thyme leaves
- ½ tsp (2 mL) salt
- ¼ tsp (1 mL) granulated sugar
- 1 cup (250 mL) olive oil, preferably extra-virgin
- Our fresh and tangy classic French vinaigrette marries well with the subtle flavour of lettuce. But don’t stop at salads; splash this vinaigrette over roasted chicken or fish for a quick no-cook sauce.
Instructions
- In a bowl, whisk vinegar with garlic, Dijon, tarragon, salt and sugar. Slowly whisk in oil until evenly mixed. Or in a food processor or blender, whirl vinegar with garlic, Dijon, seasonings and sugar until mixed. With motor running, gradually add oil. Taste and add more sugar if needed. Store, covered, or pour into a jar and seal. Dressing will keep well, refrigerated, up to 1 week. Whisk or shake dressing before using.
