Large Batch Ever Ready Bran Muffins
Ingredients
- 5 cups all purpose flour
- 5 teaspoons baking soda
- 1 tablespoon salt
- 2 cups brown sugar
- 3 cups natural bran
- 2 cups raisins
- 3 eggs
- 1 cup vegetable oil
- ¼ cup molasses
- 1 quart buttermilk
- 1½ cups water
Instructions
- Place all dry ingredients into one bowl,
- blend well.Beat eggs with oil and molasses in large bowl.
- Beat in milk and water.
- Pour wet mixture into dry ingredients.
- Cover and keep refrigerated.
- This mixture actually improves with age and can be kept
- in the refrigerator for up to 2 weeks.
- To Bake: stir batter, fill muffin tins ⅔ full
- then bake in preheated 400 degree oven for 20 minutes.
- Makes 5 dozen muffins.
- Note I store muffin batter in large glass jar and cover the top of the batter with saran wrap to prevent it from getting dark
