Large Batch Ever Ready Bran Muffins
 
Ingredients
  • 5 cups all purpose flour
  • 5 teaspoons baking soda
  • 1 tablespoon salt
  • 2 cups brown sugar
  • 3 cups natural bran
  • 2 cups raisins
  • 3 eggs
  • 1 cup vegetable oil
  • ¼ cup molasses
  • 1 quart buttermilk
  • 1½ cups water
Instructions
  1. Place all dry ingredients into one bowl,
  2. blend well.Beat eggs with oil and molasses in large bowl.
  3. Beat in milk and water.
  4. Pour wet mixture into dry ingredients.
  5. Cover and keep refrigerated.
  6. This mixture actually improves with age and can be kept
  7. in the refrigerator for up to 2 weeks.
  8. To Bake: stir batter, fill muffin tins ⅔ full
  9. then bake in preheated 400 degree oven for 20 minutes.
  10. Makes 5 dozen muffins.
  11. Note I store muffin batter in large glass jar and cover the top of the batter with saran wrap to prevent it from getting dark
