Butter Tart Squares
Ingredients
- 2 c flour
- 2 T granulated sugar
- 1 c cold butter, cubed
- Filling
- 3 eggs
- 2¼ c packed brown sugar
- ¾ c melted butter
- 1 T vinegar
- 1 ½ t vanilla
- 1 ½ c currants or raisins
- ½ c chopped pecans
Instructions
- In a bowl, stir together flour and sugar; cut in butter. Press into 13X9 “ cake pan. Bake at 450 F for 20-25 min.; set aside.
- Filling: Whisk together eggs and sugar; add butter, vinegar and vanilla. Stir in raisins. Pour over base; bake for 30-40 min til golden brown and slightly firm when touched, shielding edges with foil to prevent over browning, if necessary. Let pan cool on rack. Cover and let stand at room temp overnight; Sift icing sugar over top.
