Chicken Tortilla Soup

A good way to use leftover chicken or turkey and corn on the cob
Ingredients
- 2T oil
- 1 onion chopped
- 1 sweet red pepper, diced
- 1 jalapeno pepper, seeded and minced
- 2 cloves garlic, minced
- 1 t cumin
- 1 t dried oregano
- 1 tsp chili powder
- 3 plum tomatoes peeled and chopped
- 6 c chicken broth
- 2 c diced or shredded cooked chicken
- 1 c fresh corn kernels
- 2 T lime juice
- pinch white sugar
- pepper
- Garnish
- 2T chopped fresh coriander
Instructions
- In large pot, heat oil, add onion and cook about 3 min. Add red and jalapeno peppers, cook about 5 min stirrring often. Add garlic and spices, cookfor 2 min stirring often.
- Stir in tomatoes and broth, and simmer covered for about 20 min.
- Add chicken and corn, simmer until corn is tender,about 2 min
- Just before serving, stir in lime juice, sugar, pepper to taste
- In bowls garnish with coriander and corn chips
