Buttermilk Cornbread Waffles

Ingredients
- ⅓ cup all-purpose flour
- ⅓ cup whole-wheat flour
- ¼ cup fine cornmeal
- ¼ cup cornstarch
- ½ tsp baking powder
- ¼ tsp baking soda
- ¼ tsp salt
- 1 cup buttermilk
- ⅓ cup canola oil
- 2 egg whites
- 1 tbsp granulated sugar
Instructions
- PREHEAT waffle maker according to manufacturer’s instructions.
- WHISK flours with cornmeal, cornstarch, baking powder, baking soda and salt in a large bowl. Stir in buttermilk and oil, being careful not to over-mix.
- BEAT egg whites in a medium bowl with an electric mixer until soft peaks form when beaters are lifted, about 1 min. Sprinkle in sugar and continue beating until glossy peaks form, about 1 more min. Fold egg white mixture into batter until just combined.
- SPRAY waffle maker lightly with oil. Ladle in batter and cook until golden, 3 to 4 min.
