Cheesy Butternut Gratin
Ingredients
- 1 2lb butternut squash
- 1 c grated cheddar cheese
- ¾ c milk (liquid from squash)
- 2 eggs
- ¼ c parmesan grated, divided
- 2 T lemon juice
- 2 cloves minced garlic
- ¼ c finely chopped walnuts
- ½ c fresh bread crumbs
- 2 T parsley
- 1 T butter, melted
Instructions
- Cook squash in oven
- In blender with milk, eggs, lemon, garlic, squash
- Stir in cheddar and ½ parmesan

- Mix rest of topping ingredients and sprinkle on
