Cheesy Butternut Gratin
 
Ingredients
  • 1 2lb butternut squash
  • 1 c grated cheddar cheese
  • ¾ c milk (liquid from squash)
  • 2 eggs
  • ¼ c parmesan grated, divided
  • 2 T lemon juice
  • 2 cloves minced garlic
  • ¼ c finely chopped walnuts
  • ½ c fresh bread crumbs
  • 2 T parsley
  • 1 T butter, melted
Instructions
  1. Cook squash in oven
  2. In blender with milk, eggs, lemon, garlic, squash
  3. Stir in cheddar and ½ parmesan
  4. " sq baking dish, greased
  5. Mix rest of topping ingredients and sprinkle on
  6. Bake
