Emily’s Christmas Cookies

Emily's Christmas Cookies
 
Ingredients
  • 4 eggs
  • ½ cup maple syrup
  • 2 cup chopped dates
  • Finely grated zest of 1 or 2 oranges
  • 2 cup flaked coconut
  • 1 cup dried cranberries, coarsely chopped
  • 2 cup chopped pecans or walnuts
  • 2 teaspoon vanilla extract
  • ½ teaspoon almond extract
  • 1 t cinnamon
Instructions
  1. Beat eggs and stir in syrup, dates and zest
  2. In heavy greased frypan cook, stirring constantly for 10 to 12 min on medium heat til dates are soft
  3. Remove from heat and mix in remaining ingredients
  4. When cool roll into 2 t balls and roll in granulated sugar
  5. Refrigerate for up to 4 weeks
