Chia Jam
Ingredients
- 2 c fresh or frozen fruit
- 2T chia seeds or more
- 1 T lemon juice or less - if fruit is tart enough
- 1-2 T maple syrup (optional)
Instructions
- Heat fruit in pot, stirring occasionally, til boiling. Use potato masher or spoon to get berries to the desired consistency
- Stir in chia seeds and lemon juice and taste. Stir in sweetener if desired.
- Remove from heat and let cool for about 5 min to let jam thicken.
- Stir well and serve or store in fridge for up to 1 week or freeze for up to 3 months
- Note Recipe will need adjustments depending on type of fruit used - experiment.
- Note Raw Chia Jam - omit the cooking. Place all the ingredients in a blender and run til desired consistency. Store in glass jar in fridge for about 4 hours before using to let jam thicken. Will keep in fridge for about a week.
