1/3 c almond flourĀ
1/3 c sunflower seeds
1/3 c pumpkin seeds
1/3 c flax seed
1/3 c sesame seeds
1T psyllium husk
1 t salt
1/4 c melted coconut oil
1 c boiling water
Mix dry, mix liquid, then mix together and stir til a gel like consistency
Single thickness baking sheet lined with parchment paper – half of mixture and cover with another parchment paper to roll it out thin with a rolling pin, then remove the top parchment paper
Repeat. Bake at 300’F for about 40-45 min. Rearrange after 20min to get more even baking. Watch carefully as seeds are very heat sensitive. Leave to dry in the oven.
The crackers should be dry and crispy.
Ideas: Use some hemp seeds, chia seeds for some of the above seeds. Add hot sauce if desired.
Tried olive oil – it was okay but crackers were more crumbly
Psyllium husk – did not seem to matter if in recipe or not – maybe there for the fiber
Will try cutting into squares part way through cooking – now I just break them into pieces
