Curried Roasted Chickpeas
 
This recipe makes 13 2 tbsp servings This flavourful snack has the benefits of being low in saturated fat and a source of iron and folate. Pack in plastic bags or airtight containers for on-the-road snacks or school lunches.
Ingredients
  • 2 tbsp (30 mL) olive oil
  • 2 tsp (10 mL) curry powder
  • ¼ tsp (1 mL) garlic powder
  • ¼ tsp (1 mL) ground cumin
  • ¼ tsp (1 mL) ground coriander
  • ¼ tsp (1 mL) salt
  • 1 can (19 oz/540 mL) chickpeas
Instructions
  1. In large bowl, stir together oil, curry powder, garlic powder, cumin, coriander and salt.
  2. Drain and rinse chickpeas; pat dry with towel. Add to bowl, stirring to coat. Spread on rimmed baking sheet; bake in 400°F (200°C) oven, stirring occasionally, until golden, crisp and dried, 35 to 38 minutes.
