Turkey or Chicken Burritos
- 1 lb (454 g) extra-lean ground turkey or ground chicken or ground beef
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 fresh jalapeño pepper or pickled jalapeño pepper, seeded and minced
- 1 tbsp (15 mL) chili powder
- 1 tsp (5 mL) ground cumin
- ¼ tsp (1 mL) salt
- 1 sweet green pepper, diced
- 1-1/2 cups (375 mL) salsa
- 1 cup (250 mL) water
- ¼ cup (60 mL) chopped fresh coriander
- 8 small whole wheat tortillas
- ½ cup (125 mL) crumbled feta cheese
- In large nonstick skillet, brown turkey over medium-high heat; drain off any fat. Add onion, garlic, jalape?chili powder, cumin and salt ; saut?ntil onion is softened, about 5 minutes.
- Add green pepper, salsa and water; bring to boil. Reduce heat and simmer until thickened, about 10 minutes. Stir in half of the coriander.
- For each burrito, place rounded ½ cup (125 mL) of the turkey mixture on one side of 1 tortilla and roll up. Arrange, seam side down, in single layer in greased 13- x 9-inch (3 L) glass baking dish. (Make-ahead: Cover; refrigerate for up to 1 day.)
- Bake in 400°F (200°C) oven until golden, 20 minutes. Sprinkle with feta cheese and remaining coriander.
