A good way to use leftover chicken or turkey and corn on the cob
Ingredients
2T oil
1 onion chopped
1 sweet red pepper, diced
1 jalapeno pepper, seeded and minced
2 cloves garlic, minced
1 t cumin
1 t dried oregano
1 tsp chili powder
3 plum tomatoes peeled and chopped
6 c chicken broth
2 c diced or shredded cooked chicken
1 c fresh corn kernels
2 T lime juice
pinch white sugar
pepper
Garnish
2T chopped fresh coriander
Instructions
In large pot, heat oil, add onion and cook about 3 min. Add red and jalapeno peppers, cook about 5 min stirrring often. Add garlic and spices, cookfor 2 min stirring often.
Stir in tomatoes and broth, and simmer covered for about 20 min.
Add chicken and corn, simmer until corn is tender,about 2 min
Just before serving, stir in lime juice, sugar, pepper to taste
In bowls garnish with coriander and corn chips
