Cauliflower Pizza Crust

Cauliflower Pizza Crust
Serves: 2 crusts

Ingredients
  • 1 lb cauliflower (1 head)
  • 2 eggs
  • 3T ground chia
  • ½ c almond meal
  • ½ t garlic powder
  • ½ t dried oregano
Instructions
  1. Cut cauliflower into bite sized pieces and steam til cooked. Then cool.
  2. In food processor til rice-like texture.
  3. Mix well the rest of the ingredients
  4. Stir in the riced cauliflower and mix really well
  5. Shape with your hands on greased parchment paper, evenly, ¼ inch thick, press firmly
  6. Bake at 400 for about 30min til light gold and dry ( watch time I think I may have used less than the 30 min but cant remember)
  7. Using another piece of parchment paper flip over the crust (be careful as it will be hot) and bake about 15 min more (Again not sure of the time I think it may have been less time - as it will need to be cooked again with stuff on it.
  8. Freezes well.
  9. Read something that said try putting most of cheese between crust and sauce to keep crust crisp and then just a sprinkle of cheese on the top of the other stuff. I also should have used my pizza pan that is perforated
  10. Also 1 of recipes had the chia mixed first with water but the aim is get it dry so would not do that unless it was really to dry but should not be with the eggs.
