Chia Jam

Chia Jam
 
Ingredients
  • 2 c fresh or frozen fruit
  • 2T chia seeds or more
  • 1 T lemon juice or less - if fruit is tart enough
  • 1-2 T maple syrup (optional)
Instructions
  1. Heat fruit in pot, stirring occasionally, til boiling. Use potato masher or spoon to get berries to the desired consistency
  2. Stir in chia seeds and lemon juice and taste. Stir in sweetener if desired.
  3. Remove from heat and let cool for about 5 min to let jam thicken.
  4. Stir well and serve or store in fridge for up to 1 week or freeze for up to 3 months
  5. Note Recipe will need adjustments depending on type of fruit used - experiment.
  6. Note Raw Chia Jam - omit the cooking. Place all the ingredients in a blender and run til desired consistency. Store in glass jar in fridge for about 4 hours before using to let jam thicken. Will keep in fridge for about a week.
