Don’s BBQ Sauce

Don’s BBQ Sauce
 
This is a hot spicy sauce that is great for Ribs, or chicken or just for dipping I make a large batch then freeze it in small quantities It can also be canned in a boiling water canner as the ph of the tomatoes (already low) has been reduced by the addition of the rice wine vinegar. If ‘hot and spicy’ is not your thing then cut the chipotle powder and hot sauce back a bit.
Ingredients
  • 1 32 oz jar of tomatoes (or fresh peeled stewed tomatoes)
  • ½ cup rice wine vinegar
  • ¼ cup maple syrup (or molasses if you don’t have a maple bush)
  • 1 Tbsp Montreal Steak Spice
  • 1 Tbsp corn starch
  • 1 large onion chopped fine
  • 3 cloves garlic chopped fine
  • 1 can tomato paste
  • ½ tsp chipotle powder
  • ½ tsp hot sauce (jalapeno or equivalent)
Instructions
  1. Saute onions and garlic until tender
  2. Add Onions, garlic, tomatoes, tomato paste, corn starch, and rice wine vinegar to blender and puree, then pour contents into a large pot
  3. Add remaining spices and simmer for at least half an hour.
  4. Taste and add more
