Healthy Apple Muffins

  • 1 1/2 c rolled oats, ground up in blender or processor
  • 1/2 c almond flour
  •  dates about 3/4 cup (soak in boiling water for a few minutes til soft and then drain off water and discard) (original recipe called for 8 medjool dates – more expensive ones)
  • 1/2 c coconut oil (optional 1-2T grass fed butter as part of the 1/2 c
  • 2 T Tbsp maple syrup
  • 1-2 apples, grated (about 1-2 c total) I used frozen apple slices with skins on and just put them in the blender, Next time I will try apple sauce) You could also grind up apples in food processor before adding other ingredients.
  • 2 eggs
  • 1 t baking soda
  • 1/2 t cinnamon, 1/4 t nutmeg
  • 1/2c walnuts – optional
  • toppings, optional – coconut, seeds, nuts, etc.
  1. Oven 350
  2. Mix all ingredients in blender or food processor til a chunky batter
  3. Stir in nuts if using them
  4. Muffins tins, add toppings if using, Bake 15 – 18 min
  5. Note: the longer you blend them the more smooth and puffy they will be.
