Zucchini/Potato Hashbrowns with Eggs

4 slices bacon, chopped, optional
1 chopped onion fried for 6 min
Add and fry for 30 sec – 2 t sage, garlic, 1 chopped jalapeno
Add 3 potatoes and/or zucchini, cut in 1/2 inch pieces – cover and cook 6-8 min til  starts to soften
Uncover and add 1/4 c rst red pepper, 2 T cilantro or parsley. Fry til soft and light brown
Make indentations in the mixture with a glass measuring cup and crack the 8 eggs into each.
Cover and cook til white is set, sprinkle with 2 T parsley.
