Beet and Avocado Salad with orange dressing (excellent)

1 lb  cooked beets cut into 1 inch chunks
Mix dressing ingredients and toss with the beets
  2 t balsamic vinegar
  about 1 T orange zest (save some to garnish)
  2 T  orange juice
  2 T olive oil
  freshly ground salt and pepper
Layer cut avocado (in chunks) on top Do not toss as beets will discolour the avocado
Some of the orange zest can be sprinkled on top.
Serve

Note:  Bought organic oranges and zested them all and froze the extra zest.
