Roasted Black Pepper Cashews

2 T avocado oil
1 lb raw cashews
1 t salt
1/4 t onion powder
1/4 t garlic powder
1 1/2 – 2 t freshly ground coarse black pepper

Over low heat in cast iron frypan add all but the pepper.
Stir constantly til cashews turn golden brown ( they can easily burn)
Add pepper part way through the frying process.

Notes:
1. Can also be done in oven at 200 F but will need careful watching.
2. Nuts can be presoaked in salted water for 2 hours – this is to make them more digestible but I need to experiment with this more.  I soaked them too long and nuts were not as crunchy as I would like.
