Quinoa Beef Soup

1 lb ground beef or beef from soup bones
2 T avocado oil
2 c chopped onions
10 c water ( or soup bone broth)
1 1/2 c uncooked quinoa, well rinsed
7 medium potatoes, scrubbed and cut into 1″ chunks
2 tomatoes diced (optional)
2 t paprika
3T dried sage
1t dried thyme leaves( not powder)
salt to taste
2 c peas
4 garlic cloves minced
4 T dried parsley or fresh
3 T fresh cilantro
1/2 t fresh ground black pepper

If using ground beef, fry in the oil til cooked and add onions and fry til they are translucent.
Add to water/beef broth and bring to a boil
Add quinoa, potatoes etc down to the salt ingredient.
Simmer til quinoa and potatoes are soft about 25 min.
Add peas, garlic, parsley, cilantro and simmer 4 min.
Serve
Optional toppings: chopped avocado, hot sauce

Notes:
1.quinoa may be bitter tasting if not well rinsed
2.quinoa can be soaked in cold water for 2 hours and then drained to make nutrients more accessible. 
3. If onions are chopped ahead of time and left to sit for a few minutes, they will have more quercetin which is a good thing
