Mediterranean Salad with Edamame and excellent dressing

Dressing:
1/3 c olive oil
3 T lemon juice (fresh is optional)
2 minced garlic cloves
salt and freshly ground pepper
1/4 t honey (optional)
Mix dressing well.

sliced chicken breast or hard cooked egg wedges (optional)
2 c torn romaine
1 c edamame
halved cherry tomatoes
chopped cucumber
halved olives (optional)
1/2 c fresh mint leaves torn into 1/2 inch pieces
and the same for 1/2 c flat parsley

Toss with some of the dressing and serve with a sprinkle of hemp seeds, sunflower seeds, and/or pumpkin seed sprinkled on top. feta cheese (optional)

Note: I prefer  to mix the salad greens (romaine, mint, parsley) with the dressing, place in individual bowls or plates, and then arrange the chicken breast slices and other ingredients on top and perhaps drizzle a little more dressing on it before adding toppings. Just easier to divide up all the stuff that ends up on the bottom.
