Date and Nut Loaf

Line a 20 X 1ocm loaf pan with parchment paper hanging over the sides so can lift the cooked loaf out after it has cooled for a few min. Oven 350  

17 regular dates(cover with boiling water for a few minutes to soften) or (12 medjool dates)

Process 1/2 dates, 1 ripe banana til smooth (in food processor)     Chop the remaining dates to be used later

Then add 3 eggs and 1/3 c coconut oil/ butter ( I did a little of each) 1 tsp vanilla

Mix together dry ingredients: 2 c almond meal (I used 1c almond and 1c oat flour which is oats ground up in coffee grinder), 1 t baking powder, 1 t cinnamon, 1/4 t nutmeg, pinch of salt. Then add to processor and process

Stir in cut up dates and 1 c chopped walnuts

Bake for 35 min then cover with foil for 10 min more. Let cool slightly and remove from pan will keep several days in fridge.

Variations: added 1T chia seeds and liked it. Tried 1/4 t cloves did not like it.  original recipe had 1/4 c fat – a little dry so tried 1/2c seemed like too much so changed recipe to 1/3c
