Ever ready oatbran muffins 2

Soak 1 c or more raisins in boiling water for 5 min

2 1/2  c     oat/ almond flour mix
2 1/2 t baking soda
1/2 salt
1 1/2 c organic oat bran
1 t cinnamon 
1/4 t nutmeg
Mix together dry ingredients

1/4 c maple syrup
3 organic eggs
1/2c fat butter or coconut 
1 1/2 T organic molasses
2 c canned organic coconut milk (1/2 water is its super thick)
3T apple cider vinegar
about 1 c ground-up apple (or 1c apple sauce)
Mix liquid ingredients

Combine liquid and dry ingredients with the drained raisins
Let sit in fridge for 1 hour or more
Makes about 2 dozen – I bake half of the batter and keep the rest in the fridge for up to 3 days (probably could be longer)
bake at 375 convection for 15 – 20 min
Let cool for 10 min before removing from the pan

I thought the ones that sat in fridge for 3 days were even better than the others
