Lorraine's Lunar Rhubarb Cake
 
Ingredients
  • Batter: ½ cup butter 1 ½ cup white sugar
  • 1 egg 1 tsp vanilla
  • 2 cups flour 1 tsp baking soda
  • 1 cup buttermilk (or milk) 2 cups chopped rhubarb
Instructions
  1. Mix batter and gently add rhubarb (tossed with 1 tbsp flour.)
  2. Spoon into greased 9”x13” pan.
  3. Topping ¼ cup butter 2 tsp cinnamon
  4. cup brown sugar
  5. Blend and sprinkle topping over batter.
  6. Bake at 350 for approx 45 min
