Coconut Curry Shrimp

Coconut Curry Shrimp
 
This recipe makes 4 servings
Ingredients
  • ⅔ cup (150 mL) coconut milk
  • 1 tbsp (15 mL) fish sauce
  • 1-1/2 tsp (7 mL) mild curry powder
  • 1 tsp (5 mL) packed brown sugar
  • ¼ tsp (1 mL) salt
  • ¼ tsp (1 mL) pepper
  • 1 lb (454 g) thawed peeled deveined raw large shrimps
  • 1 sweet red pepper, diced
  • 2 green onions, chopped
  • ¼ cup (60 mL) cilantro leaves
  • 4 lime wedges
Instructions
  1. In large bowl, whisk together coconut milk, fish sauce, curry powder, brown sugar, salt and pepper. Add shrimp, red pepper, green onions and cilantro; toss to coat. Let stand for 5 minutes.
  2. In wok or saucepan, stir-fry shrimp mixture over medium-high heat until shrimp are pink, about 6 minutes. Serve with lime wedges.
